We're all about one dinner for the whole family. Kids will adore these chicken fingers yet they're sophisticated enough and healthy for the grownups. Win!
Chicken Tenders with Smoky Ketchup
1 cup almond meal½ cup ground flax meal2 Tbsp fresh rosemary, finely chopped¼ tsp pepper½ tsp salt½ tsp garlic powder6 chicken breasts, pounded thin and cut into long strips1 egg, beatenOil or baking spray for drizzlingSmoky Ketchup:1 tsp smoked paprika½ cup ketchup¼ tsp Sriracha (adjust according to preference)
Preheat oven to 400ºF and line a baking sheet with parchment paper. In a large bowl, mix together the almond meal, flax meal, rosemary, pepper, salt, and garlic powder.Dip each piece of chicken into the egg first and then the almond-flax mixture. Place on baking sheet. Continue with remaining chicken, leaving a little space between the pieces on the baking sheet.Drizzle liberally with oil and bake for 30 minutes until crisp and golden brown.Mix all ingredients together for the smoky ketchup and serve with chicken.
